Modern Wensleydales can be sharp, acidic and crumbly, but Yoredale (previously called Old Roan) is an altogether more interesting cheese. Made traditionally on the family farm with raw milk by Ben and Sam Spence, this cheese have been produced since 2019.Yoredale Wensleydale Cheese is a traditional cheese made using a pre-war recipe that results in a soft, creamy, buttery texture. With the classic lemon yogurt acidity of Wensleydale and mineral, earthy tones near the rind, our cheese offers a unique flavour profile.
Crafted from unpasteurised milk, this cheese truly embodies the essence of the farm’s ‘terroir’. Factors such as the cow’s pastures, weather, season, and even the soil bacteria all contribute to the final taste of the cheese.
Aged for 2-3 months and clothbound, each wheel of cheese is carefully tended to by hand. Regular turning and rubbing ensure uniform maturation, resulting in a well-rounded flavour.
They source their milk from a local farm with a small herd, ensuring high-quality milk and a commitment to animal welfare. The cows graze outdoors for most of the year, feeding on farm-made haylage in the winter, giving the milk a sweeter taste that carries through to the cheese.
With a batch size of 1500L of milk producing approximately 23 wheels of cheese, our Yoredale Wensleydale Cheese is a labour of love that showcases the best of Yorkshire’s dairy farming tradition.
